Looking for a quick yet tasty & fulfilling recipe to wow the family? Amber recommends the Greek Chicken Bake which offers her own variations to a popular dish. The ingredient list includes:
1-2 lbs of chicken breasts
1 can of black olives
1 can/jar of artichoke hearts
3 plum tomatoes
1 red onion
1 container of feta cheese
Olive oil
Greek seasoning which you can find at your favorite grocery store.
Preheat the oven to 350. Place the chicken into a casserole dish and drizzle with olive oil and sprinkle a generous amount of Greek seasoning on it. Put the chicken in the oven for 45 minutes or until the chicken is cooked through. Dice the tomatoes, onion, black olives and artichoke hearts then place them in a mixing bowl. Mix in the feta cheese, olive oil, and Greek seasoning. Place this mixture in a separate casserole dish and bake for 20 minutes. When ready to serve, plate the chicken and top with a generous portion of the baked veggies/cheese mixture.
Depending upon the season, Amber will serve this dish over brown rice, or on a bed of crisp lettuce, or just as is.
